My littlest boy is one today. I don’t have the words to express just how much I adore the little fecker. He drives me insane one moment and then he smiles with his absurdly generous cheeks or tries to peer around a corner and I melt.
He makes me a marshmallow parent and I don’t think I care.
On a less gushy note my laptop is flat-lining and I can’t even charge it now, so I write this post off my poxy smart phone.
For my baby Dot I made a not very exciting chocolate bundt castle. We’re having his big party on Sunday so he’ll get a proper cake then.
Last thing. This is a whopper cake. It’d happily feed about 8 – 10.
Oven temperature 170 Celsius
Butter 300g
Light muscovado 360g
Dark chocolate 150g
Eggs 4
Creme fraiche 100g
Yoghurt 200g
Plain flour 360g
Baking powder 2 teaspoons
I glazed it with the glaze from the vanilla bundt I made ages ago. Click here for that recipe.
I just so happened to have a silicone castle mould, thanks to one of da’s spontaneous lidl moments, and so obviously went for a castle cake. You can use whatever tin you want but it is a big cake. Be warned.
Preheat the oven and line whatever tin you’ve chosen.
Put the butter and sugar in a food processor and blitz to combine. Add the eggs one at a time with a good whizz between each.
Pop the chocolate in a heatproof bowl and melt it in the microwave.
Add in the the creme fraiche and yogurt. Whizz some more.
Add in the flour and baking powder. Blitz even more.
Finally pour in the chocolate and one last blitz will have you done.
Empty the batter into the tin and place the whole lot in the oven. Bake it for 20mins, turn it around and bake for another 20mins till a skewer or knife comes out clean.
Leave to cool in the tin before turning it out and glazing it.
